San Francisco is a district in the Cordillera Central, known as La Zona de Los Santos. It's also the name of the 55-year-old farm run by Edgar Fallas Solis, his wife Ligia, and their son William. The family owns 10-12 hectares of coffee, inter cropped with avocados, citrus, and banana trees, and grows Caturra, Catuai, and Catimor varieties obtained from ICAFE.

Edgar uses bio-dynamic techniques and inter cropping to protect the environment, and employs garlic and chili to deter pests. The family monitors the sugar content of cherries with a Brix meter, and only harvests them when they're ready. Asoproaaa Coop counts Edgar and his family, along with over 1,000 other members, and helps with financial and commercial aid, as well as providing producers with access to credit.

The association only buys high-quality specialty lots due to capacity restrictions and sells lower grades to other buyers in the area. After green sorting and separation, lower grades are roasted and packaged on site for local sales, while the rest undergoes a drying process on patios and raised beds until they reach a stable 10.5% moisture content. Quality has been improving annually since collaborating with the association.
